[MKOB] apples in brewing

Has anyone used apples in brewing before?  Specifically, I was thinking 
about letting a mead sit on cut, peeled and cored Granny Smith apples to 
soak up some of the flavor in the secondary.

My main worry was the pectin in the apples...has anyone had a problem 
with this making a hazy beer or wine?
